You can play without one. An account (Sign in with Apple) is needed to save your streak and archive across devices.
Pro is an annual subscription that unlocks the full experience. Manage or cancel it any time in iOS Settings → your Apple ID → Subscriptions.
Tap Restore in the app while signed in to the Apple ID you subscribed with.
Use the delete-account option in the app's settings to permanently remove your profile and puzzle history from our servers.
